Guam red rice

6 servings

Ingredients

Quantity Ingredient
4 slices Bacon;cut into small pieces
1 medium Onion; chopped
2 cups Water; divided
2 tablespoons Achiote seeds
2 cups Rice; uncooked
1 teaspoon Salt
½ cup Peas; frozen

Directions

This is a Guam national dish that is rather mild.

Saute bacon and onion about 5 minutes, drain off fat and set aside.

Add ½ cup water to achiote seeds to color the water, about 10 to 15 minutes.

Strain the seeds from the water and pour the red water into a saucepan; discard the seeds. Add remaining water, rice, salt, bacon and onion. Bring to a boil, cover and turn heat down to a simmer; cook 20 to 25 minutes. When rice is almost cooked, stir in frozen peas. Serve warm.
