Ginger plum pork chops

Ingredients

Quantity Ingredient
4 Boneless pork chops, 3/8\" thick
1 teaspoon Vegetable oil
1 Jar (8 oz.) plum preserves
2 teaspoons Ground dry ginger
3 tablespoons Cider vinegar

Directions

Heat oil in nonstick skillet over medium-high heat. Brown chops on one side, turn; stir together remaining ingredients and add to skillet. cover skillet, lower heat and simmer 5 minutes. Serve with roasted potato wedges if desired. Makes 4 servings.
