Ginger-flavored chinese-style adzuke beans

Cinnamon stick; 1 inch piece | ||

Star anise; optional | ||
1 | teaspoon | Salt |
1 | Onion | |
¼ | cup | Molasses; or plum jelly |
2 | tablespoons | Sweet sherry |
1 | tablespoon | Soy sauce; (Tamari) |
Directions
Put half of the adzuke beans into a pot with 3 cups of water, and bring them to a boil. Tie the garlic, peppercorns, ginger, cinnamon, coriander, cloves and a small piece of the star anise, if using, into a spice bag. Put the bag into the bean pot with the salt, remaining adzuke beans and the onion. Bring the mixture to a boil again, then cover and cook for about two hours, or until the beans are tender.
