Glazed veggies on sticks

Ingredients

Quantity Ingredient
4 tablespoons Olive oil
2 tablespoons Lemon juice
2 tablespoons Basil; fresh, chopped
2 tablespoons Garlic; finely chopped
Salt & pepper, to taste
1 Red pepper
1 Red onion
1 Yellow zucchini
8 Mushrooms

Directions

To make glaze, combine oil, lemon juice, basil, garlic, salt and pepper and refrigerate for an hour.

Cut red pepper, onion and zucchini into eights. Spear vegetables, including mushrooms, with eight 6-inch wooden skewers. (Soak skewers in water for ½ hour before use to prevent burning.) Grill on barbecue over medium heat and baste with glaze until vegetables are cooked, approximately 5 minutes.

TIP: To intensify flavour, marinate vegetable pieces in glaze for 1 hour.
