Gratin of creamed spinach and eggs

Ingredients

Quantity Ingredient
3 tablespoons Butter
1 cup Fresh bread crumbs
1 Onion, sliced
¼ cup All-purpose flour
2 cups 1% milk
½ teaspoon Each salt (approx) & nutmeg
¼ teaspoon Pepper
1 pack (10 oz.) frozen chopped spinach, thawed and squeezed dry
½ cup Freshly grated Parmesan cheese
6 Hard-cooked eggs
1 cup Thin strips ham (optional)
1 minute.

Directions

In large saucepan, melt butter; remove 1 tbsp. and toss with bread crumbs.

Set aside.

Add onion to the pan; cook over low heat, stirring often, for 5 minutes or until softened. Sprinkle with flour; cook, stirring, for 1 minute.

Gradually whisk in milk, salt, nutmeg and pepper; cook, stirring, over medium heat for about 3 minutes or until thickened. Add spinach and Parmesan cheese; cook for

Quarter eggs lengthwise; place, cut side up, in greased 6 cup baking dish.
