Green sauce with capers and herbs

Ingredients

Quantity Ingredient
4 Pickled cucumbers
1 large Bunc flat-leaved parsley
1 ounce Fresh mint
1 ounce Capers
2 Eggs; hard-boiled
4 tablespoons Fresh breadcrumbs
2 Garlic cloves
2 tablespoons White wine vinegar
1 tablespoon Sugar
8 tablespoons Extra virgin olive oil
Salt and pepper

Directions

1. Finely chop the cucumbers, parsley, mint and capers. Mash the hard-boiled eggs.

2. Put all the ingredients in a food processor and blend everything together to produce a smooth, green sauce. Serve warm or cold.
