2 ts Lemon Zest -- grated

2 TB Fresh Mint -- chopped

½ ts Salt

¼ ts Freshly Ground Pepper

: Cilantro Or Mint Sprigs Whisk olive oil, zest, mint, salt and pepper together and marinate salmon in mixture for 1 hour. At serving time, grill salmon over hot coals until just done. Place on warm plates with a heaping tablespoon or two of corn salsa on top, warm basil cream around and a garnish of herb sprigs. Serve immediately
