Ham and banana pancakes

1 | Egg; size 3 | |
300 | millilitres | Milk; (1/2 pint) |
1 | 200 gram car full fat soft cheese; (7oz) | |
125 | grams | Ham; chopped (4oz) |
2 | Bananas; peeled and sliced | |
2 | tablespoons | Freshly chopped parsley |
Salt and freshly ground black pepper | ||
50 | grams | Grated mozzarella cheese; (2oz) |

To make the pancakes, place the flour, salt, egg and milk in a bowl and beat well.
Pour a little batter into a non-stick frying pan until the batter coats the bottom of the pan. Cook for 1-2 minutes, loosen the edges and cook other side for further 1-2 minutes or until golden brown. Continue to make 6-8 pancakes.
Mix all the filling ingredients together, divide between each pancake, roll up and place in an ovenproof dish.
Sprinkle with the cheese and place in a preheated oven 200 C, 400 F, Gas Mark 6 for 10-15 minutes, until golden. Sprinkle with the parsley and serve.
