Whole wheat-banana pancakes
6 Servings
Ingredients
Quantity | Ingredient | |
---|---|---|
1 | cup | All-purpose flour |
1 | cup | Whole wheat flour |
1 | teaspoon | Baking soda |
1 | teaspoon | Baking powder |
1 | teaspoon | Salt |
3 | tablespoons | Honey |
3 | tablespoons | Sugar |
1 | Egg | |
3 | tablespoons | Butter; melted |
1 | cup | Milk plus whatever more you need to achieve correct texture |
2 | Bananas (older bananas seem to taste better) |
Directions
I mix all the dry ingredients, then add the egg, honey, butter, and milk.
Finally, I blend in the bananas. I use a cordless beater, which is not capable of going too fast. Makes about 20 4" pancakes, I guess. I usually make "silver dollars" for my kids, so I don't count 'em.
I've also substituted apples (2), and a tsp of cinnamon for bananas, with good results.
