Hearty turkey-vegetable soup

Ingredients

2 cups Turkey stock
¼ cup Reg.pearl barley
Salt to taste
¼ teaspoon Pepper
1 small Onion, chopped
¼ cup Chopped parsley
½ cup Sliced carrots
½ cup Chopped celery
½ cup Whole kernel corn, drained
1 cup Cooked cubed Turkey

Directions

Combine stock, barley, salt, pepper, onion and parsley in a 3-quart saucepan; bring to a boil. Lower heat and simmer for 40 minutes, stirring occasionally. Add more stock if necessary. Add celery and carrots; cook an additional 20 minutes, stirring frequently. Add corn and turkey; bring to a boil for about 2 minutes to heat through. Submitted By LOU RAMSAY On 02-12-95
