Highland oat squares

Ingredients

Quantity Ingredient
2 ounces Vegetable margarine
1 Finely chopped onion
4 ounces Mushrooms; chopped (optional)
5 ounces Rolled oats
6 ounces Finely grated carrot
5 ounces Vegetarian cheese; grated
1 Free range egg; beaten
1 Clove garlic; crushed (optional)
1 tablespoon Soya sauce
1 tablespoon Tomato sauce or pur‚e
1 teaspoon Basil
Salt and black pepper to taste

Directions

1. Preheat oven to 170øC/325øF/gas mark 3.

2. Melt the margarine in a pan. Gently cook the onion and mushrooms for 5 minutes. Transfer them to a mixing bowl and add all the other ingredients.

3. Season to taste with salt and pepper and mix well. Press mixture into a greased, shallow baking tin and bake for 25-30 minutes.

4. Cut into 20 small squares and serve.
