Highland oat squares

2ouncesVegetable margarine
1Finely chopped onion
4ouncesMushrooms; chopped (optional)
5ouncesRolled oats
6ouncesFinely grated carrot
5ouncesVegetarian cheese; grated
1Free range egg; beaten
1Clove garlic; crushed (optional)
1tablespoonSoya sauce
1tablespoonTomato sauce or pur‚e
1teaspoonBasil
Salt and black pepper to taste

Directions

1. Preheat oven to 170øC/325øF/gas mark 3.

2. Melt the margarine in a pan. Gently cook the onion and mushrooms for 5 minutes. Transfer them to a mixing bowl and add all the other ingredients.

3. Season to taste with salt and pepper and mix well. Press mixture into a greased, shallow baking tin and bake for 25-30 minutes.

4. Cut into 20 small squares and serve.
