Huevos motulenos

Ingredients

Quantity Ingredient
medium Onion, finely chopped
1 each 3-inch green chili, minced
2 tablespoons Oil
3 larges Tomatoes, peeled and chopped
Salt to taste
8 eaches Corn tortillas
Bacon fat or lard
2 cups Mashed, fried black beans
1 cup Diced, cooked ham
½ cup Cooked peas
4 larges Eggs, fried
4 tablespoons Crumbled Cotija or grated Parmesan cheese

Directions

Make a salsa by sauteing onion and chili in oil until well softened.

Add tomatoes and cook over low heat until well blended. Season with salt to taste. Set aside. Fry tortillas in fat until they're crisp.

Spread 4 tortillas with hot fried beans and sprinkle with diced ham and peas. Top each mixture with a fried egg, then cover with remaining tortilla. Heat salsa until it is very hot and spoon over each portion. Top with cheese. Makes 4 servings.
