Huevos motulenos

Ingredients

1½ | medium | Onion, finely chopped |
1 | each | 3-inch green chili, minced |
2 | tablespoons | Oil |
3 | larges | Tomatoes, peeled and chopped |
Salt to taste | ||
8 | eaches | Corn tortillas |
Bacon fat or lard | ||
2 | cups | Mashed, fried black beans |
1 | cup | Diced, cooked ham |
½ | cup | Cooked peas |
4 | larges | Eggs, fried |
4 | tablespoons | Crumbled Cotija or grated Parmesan cheese |
Directions
Make a salsa by sauteing onion and chili in oil until well softened.
Add tomatoes and cook over low heat until well blended. Season with salt to taste. Set aside. Fry tortillas in fat until they're crisp.
Spread 4 tortillas with hot fried beans and sprinkle with diced ham and peas. Top each mixture with a fried egg, then cover with remaining tortilla.
