Jalapeno pepper omelet

Ingredients

Quantity Ingredient
1 Firm jalapeno peppers; minced (1 to 2)
cup Finely diced green peppers
cup Finely diced red peppers; (for color)
cup Finely diced onion
½ teaspoon Salt; (to taste)
¼ teaspoon Pepper; (to taste)
1 teaspoon Tabasco; (optional)
2 tablespoons Chopped parsley; cilentro or basil
; (optional)
2 tablespoons Margarine or butter
1 slice Cheese; (any) (1 to 2)
5 Eggs

Directions

Add margarine or butter to skillet or omelet pan. Add minced jalapenos, diced green and red peppers and onions to margarine and saute till onions are glassy looking. Season with salt, pepper, Tabasco and herbs. Beat eggs and water and slowly pour throughout sauteed mixture so that mixture will remain spread evenly throughout the pan. Simmer covered over low heat till eggs are set. Add cheese if you want to melt it slightly. Add minced parsley or paprika to add color and garnish touches. Serves 6-8. Delicious! Enjoy!
