Kathy's sweet potatoes

Ingredients

3 | cups | Mashed sweet potatoes; fresh or canned |
½ | cup | Sugar |
2 | tablespoons | Melted margarine |
⅓ | cup | Skim milk |
¼ | cup | Plus 2 T buttermilk |
1 | Egg + 2 egg whites; well beaten | |
1 | teaspoon | Vanilla |
¼ | teaspoon | Salt |
⅓ | cup | Firmly packed brown sugar |
¼ | cup | Flour |
1½ | tablespoon | Buttermilk |
1 | tablespoon | Melted margarine |
⅓ | cup | Chopped pecans |
Directions
TOPPING
Combine sweet potatoes, sugar, 2 T melted margarine, skim milk, ¼ c + 2 T buttermilk, egg, egg whites, vanilla and salt. Mix well and pour into an 8-inch square baking dish that has been sprayed with Pam. In a small bowl, combine topping ingredients; sprinkle evenly over potato mixture. Bake at 350F for 25-45 minutes or until set and top is browned.
