Kathy's sweet potatoes

Ingredients

Quantity Ingredient
3 cups Mashed sweet potatoes; fresh or canned
½ cup Sugar
2 tablespoons Melted margarine
cup Skim milk
¼ cup Plus 2 T buttermilk
1 Egg + 2 egg whites; well beaten
1 teaspoon Vanilla
¼ teaspoon Salt
cup Firmly packed brown sugar
¼ cup Flour
tablespoon Buttermilk
1 tablespoon Melted margarine
cup Chopped pecans

Directions

TOPPING

Combine sweet potatoes, sugar, 2 T melted margarine, skim milk, ¼ c + 2 T buttermilk, egg, egg whites, vanilla and salt. Mix well and pour into an 8-inch square baking dish that has been sprayed with Pam. In a small bowl, combine topping ingredients; sprinkle evenly over potato mixture. Bake at 350F for 25-45 minutes or until set and top is browned.
