Kitfo (steak tartare)

Ingredients

¼ cup Niter kebbeh
½ cup Onions -- chopped fine
4 teaspoons Green pepper -- chopped

2 teaspoons Chiles -- chopped fine
1 teaspoon Ground ginger
½ teaspoon Garlic -- chopped fine
½ teaspoon Ground cardamom
1 teaspoon Lemon juice
2 teaspoons Berbere or awaze
2 teaspoons Salt
2 pounds Ground round steak

Directions

In a large skillet, melt the niter kebbeh over low heat. Add onions, green pepper, chiles, ginger, garlic, and cardamom. Raise heat to med. and cook 2 min., stirring constantly. Place mixture in a bowl and cool for 15 min.

Stir in lemon juice, berbere and salt. Stir in raw beef and mix thoroughly. Serve with injera, breads, or crackers. Kitfo can also be stuffed in split Italian frying peppers and served in this fashion.
