Lemon-broccoli goldenrod

Ingredients

¾ | pounds | Fresh broccoli |
¼ | cup | Water |
⅓ | cup | Mayonnaise |
1 | tablespoon | Lemon juice |
½ | teaspoon | Onion; grated |
⅛ | teaspoon | Thyme, whole dried |
1 | teaspoon | Lemon rind; grated |
Directions
Recipe by: Come and Get It! by Jr. Welfare League of Talladega, Al Trim off leaves of broccoli and remove tough ends of lower stalks.
Wash broccoli and slice into separate spears. Arrange broccoli spears in a circle in a glass pie plate, placing stems toward outside. Add water.
Cover with heavy-duty plastic wrap and microwave on high for 4 to 6 mins or until spears are tender. Drain well and arrange on serving platter.
Combine next four ingredients in a 1-cup glass measure. Microwave on high for 30 to 40 secs or until thoroughly heated. Pour over broccoli. Sprinkle with lemon rind.
YIELD: 2 to 4 servings.
