Low-fat black beans & rice

2 ts olive oil

1 c chopped onion

½ c chopped green pepper

2 c cooked long grain rice

½ ts ground cumin

⅛ ts ground red pepper

⅛ ts dried coriander

15 oz can black beans

¾ c chopped tomatoes

Heat oil in skillet on medium-high heat, add onions, pepper and saute until tender. Stir in rice and next 3 ingredients. Saute 3 minutes.

Add beans and tomatoes, cook 3 more minutes.
