½ | cup | Liquid Butter Buds or fatfree chicken broth |
2 | cups | Canned pinto beans, rinsed and drained, or fresh cooked |
2 | eaches | Tb chile powder |
2 | teaspoons | Ground cumin |
½ | teaspoon | Lite salt, optional |
⅛ | teaspoon | Ground pepper |
½ | cup | Salsa |
Directions
Heat liquid Butter Buds in a 10" skillet over medium heat until hot.
Add chopped onion and cook until soft. Add pinto beans; cook, stirring occasionallly, 5 minutes. Mash beans; stir in chile powder, salsa, cumin, salt and pepper. Add more Butter Buds or chicken broth to skillet if necessary. Cook and stir until a smooth paste forms, about 5 minutes. Garnish with nonfat grated cheddar cheese melted on top.
