Lowfat refried beans - butter busters^

Ingredients

Quantity Ingredient
½ cup Chopped onion
½ cup Liquid Butter Buds or fatfree chicken broth
2 cups Canned pinto beans, rinsed and drained, or fresh cooked
2 eaches Tb chile powder
2 teaspoons Ground cumin
½ teaspoon Lite salt, optional
teaspoon Ground pepper
½ cup Salsa

Directions

Heat liquid Butter Buds in a 10" skillet over medium heat until hot.

Add chopped onion and cook until soft. Add pinto beans; cook, stirring occasionallly, 5 minutes. Mash beans; stir in chile powder, salsa, cumin, salt and pepper. Add more Butter Buds or chicken broth to skillet if necessary. Cook and stir until a smooth paste forms, about 5 minutes. Garnish with nonfat grated cheddar cheese melted on top.
