Make-ahead pineapple carrot salad

Ingredients

1 pack Orange gelatin; (8 oz)
1 cup Boiling water
½ cup Cold water
½ cup Shredded carrots
1 can Crushed pineapple; drained (8 oz)
cup Chopped pecans
½ cup Flaked coconut
cup Chopped celery

Directions

Dissolve orange gelatin in boiling water in a large bowl. Add cold water and chill until the consistency of unbeaten egg white. Stir in remaining ingredients. Pour mixture into lightly oiled 4-cup mold. Chill until firm.

Unmold onto lettuce lined serving plate.
