3 pounds (to4) sweet potatoes
1 cup Packed brown sugar*
each Tb cornstarch
¼ teaspoon Lite salt, optional
teaspoon Cinnamon
1 cup Apricot nectar
2 teaspoons Grated orange peel
2 eaches Tb liquid Butter Buds
½ cup Grape-Nuts cereal
2 cups (8oz) mandarin oranges, drained

Directions

Boil potatoes and set aside. combine sugar, cornstarch, lite salt and cinnamon in a saucepan. Add apricot nectar and orange rind; bring to a boil, stirring constantly. Remove from heat. Stir in Butter Buds. Pour sauce over the sliced, peeled sweet potatoes and mandarin orange sections that have been placed in a 9 x 13" casserole that has been sprayed with a nonstick cooking spray. Sprinkle Grape-Nuts on top and bake at 350F. 25 minutes. Per sugar serving: 161 cal., 2g fat (1%), 0mg chol., 2g fiber, 2g pro., 40g carb., 65mg sod. Per S&L serving: 128 cal., 32g carb.
