Mango flummery

2 | larges | Mangos -- peel, slice |
2 | tablespoons | Lemon Juice |
1 | cup | Orange Juice |
⅔ | cup | Sugar -- or substitute |
⅓ | cup | Tapioca Quick Cooking Kind |
½ | tablespoon | Orange Peel -- grated |
Banana Slices -- optional |
Directions
In a blender or food processor, whirl mangos until pureed; you should have 3 C.
Transfer puree to a 3 qt pan. Stir in lemon juice, orange juice, sugar, and tapioca. Let stand for 5 min.; then bring to a full boil over med-high heat, stirring constantly. Remove from heat; stir in orange peel. Let cool for 15 min.; cover and refrigerate until softly set (about 2 hrs).
