Melon salad with figs

Ingredients

1½ | cup | Plain nonfat or lowfat |
Yogurt | ||
2 | tablespoons | Honey |
1 | tablespoon | Fresh lime juice |
8 | Fresh figs -- quartered | |
1 | small | Honeydew |
Peeled, seeded & sliced into | ||
Bite-size pcs | ||
4 | teaspoons | Chopped fresh mint leaves |
¼ | cup | Chopped walnuts or pecans |
Directions
Combine the yogurt, honey & lime juice. Cover & chill until serving time.
Place 8 fig quarters in a circle in the center of 4 plates. Arrange the melon pieces around the figs. Before serving, spoon the yogurt dressing over the fruit. Sprinkle with the mint & nuts. 4 servings Posted by Vonlisa.
