Minted cantaloupe dessert soup

Ingredients

6 cups Cantaloupe; Cubed
¾ cup Orange Juice
3 tablespoons Lime Juice
¼ teaspoon Mint Extract
2 teaspoons Powdered Sugar
8 ounces Vanilla Low-Fat Yogurt
2 tablespoons Plain Nonfat Yogurt
Mint Sprigs; Optional

Directions

Place 3 cups cantelope and next 3 ingredients in a blender; process until smooth, stopping once to scrape down sides. Add ramining 3 cups cantaloupe; process until smooth.

Combine the cantaloupe mixture, powdered sugar, and vanilla yogurt in a large bowl, and stir well with a whisk.

Cover and chill. Garnish each serving with a plain yogurt swirl and a ming sprig, if desired.
