Minted melon

Ingredients

Quantity Ingredient
1 Orange-fleshed melon; seeded flesh in lg. cubes
1 teaspoon Grated orange rind
¼ cup Orange juice
2 tablespoons Sugar
cup Raspberry vinegar
¼ cup Fresh mint; finely chopped

Directions

Put melon cubes in serving bowl. Combine other ingredients; mix well to dissolve sugar. Pour over melon. Chill, covered, for an hour to let flavors blend.
