Minted peas and onions

Ingredients

3 | tablespoons | Olive oil |
2 | mediums | Yellow onions; peeled and sliced |
20 | ounces | Frozen peas - (2 pkgs); thawed |
2 | tablespoons | Chopped fresh mint |
Salt; to taste | ||
Freshly-ground black pepper; to taste |
Directions
Heat a large frying pan and add the oil and sliced onion. Saute until transparent. Add the thawed peas and cook over medium heat until the peas are hot. Add the mint and salt and pepper to taste. Toss together and serve. This recipe serves 6 to 8.
Comments: This is a simple and flavorful way to dress up your kids' favorite vegetable. The youngsters can easily cook this dish and they will be quite proud of themselves.
