Molho malageuta (malagueta sauce)

Quantity Ingredient
1 cup Chiles, malagueta; stemmed
1 cup Vinegar
1 Wine bottle, 750ml
Oil, olive

Directions

HEAT SCALE - HOT

Place the chiles in the wine bottle, add the vinegar and olive oil to fill. Cork the bottle securely. Place bottle in refrigerator and let steep for at least 2 weeks, shaking the bottle infrequently.

Substitute tabascos or piquins if malagueta chiles are unavailable.
