Mom's sausage and peppers pasta sauce

Ingredients

4 | tablespoons | Olive oil |
3 | cloves | Garlic, chopped |
2 | mediums | Onions, thinly sliced |
4 | Italian peppers or 2 to 3 | |
. green bell peppers | ||
. (about 1 lb), cut into | ||
. strips | ||
1 | pounds | Sweet Italian sausage, |
. cut into 1\" slices | ||
1 | can | Italian tomatoes, 16-ounce |
. pushed through a sieve | ||
Salt and pepper to taste |
Directions
Heat 3 tablespoons oil in large skillet. Add garlic and saute until light golden. Add onions and cook over low heat about 10 minutes, until soft. Remove garlic and onions with slotted spoon and set aside. Add remaining oil to skillet and cook peppers 10 minutes.
Remove and set aside with onions and garlic. Add sausage and cook 10 to lS minutes, browning lightly on all sides. Add tomatoes and cook 30 minutes, coverlng after sauce has thickened to desired consistency. Stir in vegetables at the end of cooking time.
Italian street fairs often feature this as a sandwich. Follow directions above, but cut sausage into 4" pieces and split, lengthwise. Omit the tomatoes. Serve on split Italian rolls.
