Mustard and sage grilled chicken^

Ingredients

¼ cup Minced fresh chives
¼ cup Chopped fresh thyme
¼ cup Sage pesto
¼ cup Dijon mustard
¼ cup Fresh lemon juice
1 teaspoon Extra virgin olive oil
½ teaspoon Grated lemon rind
4 (6oz) skinned chicken breast
Halves, with bone
Vegetable cooking spray
Sage sprigs, optional

Directions

Combine chives, thyme, pesto, mustard, lemon juice, olive oil and lemon juice in a bowl and stir well.

Spread ½ cup pesto mixture over both sides of chicken, cover and marinate in refrigerator 1 to 4 hours.

Prepare grill. Place chicken breast, bone side up, on grill rack sprayed with vegetable cooking spray and grill 40 minutes or until chicken is done, turning occasionally and basting with the remaining ¼ cup pesto mixture. Garnish with sage sprigs, if desired.
