New mexico pasta salad

1½ | cup | Dry pasta; cooked |
½ | cup | Green onion; finely chopped |
½ | small | Red onion; diced |
1 | cup | Corn; cooked |
½ | cup | Black beans; cooked |
2 | smalls | Tomatoes; chopped |
½ | small | Red bell pepper; diced |
½ | small | Anaheim chili pepper; finely diced |
3 | tablespoons | Lowfat mayonnaise |
¼ | cup | Black olives; chopped |
1 | Sprig fresh cilantro; minced | |
½ | teaspoon | Red chile pepper flakes |
Directions
Combine all the ingredients, excluding the salt, pepper, olives,cilantro, and chile pepper flakes in a medium-size bowl. Salt and pepper the salad according to individual taste. Serve equal portions of the salad on five salad plates. Garnish with the olives, cilantro, and chile pepper flakes.
