New mexico pasta salad

Ingredients

Quantity Ingredient
cup Dry pasta; cooked
½ cup Green onion; finely chopped
½ small Red onion; diced
1 cup Corn; cooked
½ cup Black beans; cooked
2 smalls Tomatoes; chopped
½ small Red bell pepper; diced
½ small Anaheim chili pepper; finely diced
3 tablespoons Lowfat mayonnaise
¼ cup Black olives; chopped
1 Sprig fresh cilantro; minced
½ teaspoon Red chile pepper flakes

Directions

Combine all the ingredients, excluding the salt, pepper, olives,cilantro, and chile pepper flakes in a medium-size bowl. Salt and pepper the salad according to individual taste. Serve equal portions of the salad on five salad plates. Garnish with the olives, cilantro, and chile pepper flakes.
