New orleans shrimp

Ingredients

4 | cups | Water |
1 | Clove garlic, crushed Salt and pepper to taste | |
1 | small | Bay leaf |
4 | Stalks celery, finely chopped | |
1 | pounds | Medium shrimp, cleaned |
4 | Scallions, finely chopped | |
2 | tablespoons | Olive oil |
¼ | cup | Lemon or lime juice |
¼ | cup | Chili sauce |
¼ | cup | Ketchup |
1 | tablespoon | Freshly grated horseradish |
1 | tablespoon | Prepared mustard |
1 | teaspoon | Paprika Pinch cayenne pepper |
Directions
Bring water to boil. Add garlic, salt, pepper, bay leaf, celery, shrimp, and half the scallions. Cover and simmer 5 minutes. Drain; remove the bay leaf. Place shrimp mixture in a bowl and let cool.
Combine remaining ingredients in a seperate bowl; mix well. Pour over shrimp and mix until well blended. Cover and refrigerate overnight.
Serve shrimp and sauce in glass bowl placed in bowl of cracked ice.
Serve with toothpicks.
