New red potatoes with sour cream and caviar

Onion -- diced
20 smalls Red Potatoes
7 ounces Caviar -- any variety
1 pint Sour cream

Directions

Peel potatoes. Make hole with melon scoop or spoon. Cut bottom of potato so it stays level. Steam potatoes. Mix caviar with a small amount of onion and caviar. Fill potatoes and serve.

ELAINE'S NOTE: I have used small potatoes, unpeeled and halved; then just make an indentation with a spoon for the cavier...use red and black...mmmm We used to serve similar years ago and it is simple (my ideal) and elegant....
