1 | can | (14oz) stewed |
Tomatoes with juices | ||
½ | cup | Molasses |
6 | Sun-dried tomatoes | |
(not oil-packed), chopped | ||
2 | teaspoons | Salt or to taste |
Black pepper to taste |
Directions
In a large bowl, cover the peas with cold water; let soak overnight.
Drain and rinse the peas; place in a large pot and add onions, stewed tomatoes, molasses, sun-dried tomatoes, and 2 cups water. Bring to a boil. Reduce heat to low, cover and simmer until the peas are very tender and the sauce is thick, 2½-3 hours. Add more water as needed. Season with salt and pepper and serve.
