New-fashioned spam scalloped potatoes

Vegetable cooking spray
1 can 99% fat-free condensed cream of mushroom soup(10 3/4 oz)
½ cup Skim milk
1 can Diced pimiento, drained(2oz)
¼ teaspoon Pepper
1 can SPAM Luncheon Meat, cubed (12 oz)
1 cup Chopped onion
½ cup Frozen peas
cup Thinly sliced, peeled potatoes
2 tablespoons Dry bread crumbs
1 tablespoon Chopped parsley

Directions

Heat oven to 350'F. Spray a 2-quart casserole with vegetable cooking spray. In medium bowl, combine soup, milk, pimiento, and pepper. In casserole, layer half of each of SPAM, onion, peas, potatoes, and sauce. Repeat layers. Cover. Bake 60 minutes or until potatoes are nearly tender. Combine bread crumbs and parsley; sprinkle over casserole. Bake, uncovered, 15 minutes longer or until potatoes are tender. Let stand 10 minutes before serving.
