Oatmeal pumpkin cookies

2 | teaspoons | Baking powder |
½ | cup | Sugar |
½ | teaspoon | Salt |
1½ | cup | Brown sugar |
1 | teaspoon | Ginger powder |
1 | teaspoon | Almond extract |
1 | teaspoon | Cinnamon |
1 | teaspoon | Nutmeg; freshly grated if possible |
2 | Eggs | |
1½ | cup | Pumpkin puree |
1 | tablespoon | Lemon juice |
½ | cup | Blond raisins |
2½ | cup | Flour |
¾ | teaspoon | Baking soda |
Directions
Whisk the eggs in a large bowl and blend together the butter, sugars, almond extract, and lemon juice. Add dry ingredients and blend in the pumpkin, then stir in the raisins. Drop by teaspoonfuls onto lightly greased cookie sheet. Bake at 350º for 15 minutes.
