Omie's carrot pudding

Ingredients

Quantity Ingredient
3 tablespoons Butter
1 cup Sugar
½ teaspoon Salt
½ teaspoon Cloves
½ teaspoon Cinnamon
1 teaspoon Grated lemon rind
2 Eggs
2 cups Grated raw carrots
1 cup Flour
1 teaspoon Soda
1 teaspoon Lemon juice

Directions

Cream butter and sugar. Add eggs. Beat well. Add carrots, spices, salt and flour and soda. Beat well. Add lemon rind and juice. Pour into a greased mold or coffee can. Steam in hot water for 2 hours. Serve with ice cream sauce or hard sauce.

NOTES : Don't be afraid to use a coffee can if you don't have a mold. It does a very nice job as a substitute.
