Onion jam

Ingredients

1 pounds Red onions, peeled very thinly sliced (abt 4 cups)
¼ cup Balsamic vinegar
2 cups Dry red wine
2 cups Water
3 tablespoons (to 4 tbs) honey
2 tablespoons Sugar
1 pinch Cayenne pepper
1 pinch Ground cloves
Salt and pepper

Directions

1. Place the onions, vinegar, wine, water, honey, sugar, cayenne, and cloves in a large nonreactive saut‚ pan. the onions should be completely covered. Bring the mixture to a boil, reduce the heat, and gently simmer until the liquid is completely absorbed, about 45 minutes. Stir from time to time, more frequently at the end, to keep the onions from burning.

2. Correct the seasoning, adding salt and pepper, vinegar, or honey to taste. the mixture should be a little sweet, a little sour, and very highly seasoned.

Serve with pita chips or bruschetta.
