2 pounds Pan dressed skinned rex
Sole
1 teaspoon Salt
¼ cup Sugar
1 tablespoon Cornstarch
cup Fresh orange juice
1 tablespoon Grated orange rind
1 tablespoon Butter
Sliced orange, avocado &
Green seedless grapes (for
Garnish)

Directions

Arrange fish in lightly oiled shallow baking pan. Sprinkle evenly with salt. Mix together sugar & cornstarch in saucepan; add orange juice & cook, stirring constantly, until clear & thickened. Add orange rind, lemon juice & butter: heat. Brush fish with small amount of glaze; broil3-4" from heat for 8-10 minutes. Garnish platter with orange slices, avocado slices & green grapes; serve with remaining sauce.
