Oyi namul [cucumber salad]

Ingredients

Quantity Ingredient
2 larges Green cucumbers
3 teaspoons Coarse Salt
1 cup Water
2 tablespoons Mild vinegar
1 teaspoon Sugar
¼ teaspoon Cayenne pepper
1 Clove garlic, minced
1 Spring onion, minced
3 teaspoons Sesame seeds, toasted & crushed

Directions

Peel cucumbers thinly & cut across into thin slices. Place in a bowl & sprinkle with the salt and add water. Soak for 15 minutes & drain off all liquid. Combine rest of ingredients, pour over cucumbers mixing well & serve chilled.
