Papaya-watermelon salsa - bon appetit

Ingredients

Quantity Ingredient
1 cup Diced peeled seeded papaya
½ cup Diced seeded watermelon
¼ cup Diced English hothouse cucumber (unpeeled)
¼ cup Minced red onion
3 tablespoons Fresh lime juice
2 tablespoons Chopped fresh cilantro or basil
2 teaspoons Olive oil (preferably extra-virgin)
1 teaspoon Minced seeded jalapeno chili

Directions

Combine all ingredients in medium bowl. Season with salt and pepper.

(Can be made 1 hour ahead. Cover and chill.) NOTE: Good topper for grilled mahimahi, swordfish, tuna or salmon.

For the freshest flavor and texture, serve the salsa within 1 hour of preparing it.
