Pasta with red pepper and tomato sauce

Ingredients

Quantity Ingredient
250 grams Pasta shapes
1 Red pepper
1 Onion
1 can Tomatoes; chopped
1 Clove garlic
2 tablespoons Olive oil
Shaved parmesan
1 Handful fresh oregano

Directions

Cook the pasta according to instructions.

Meanwhile, prepare the sauce: chop the onion and garlic. Heat the oil in a saucepan over a medium heat. Add the onion and soften for 5 minutes then add the garlic.

Slice the pepper into thin strips and add to the saucepan. Cook gently for 10 minutes. Add the tomatoes and cook for a further 10 minutes.

Once the sauce and pasta are cooked, combine in a large dish. Tear the fresh oregano and stir in. Lastly, take the shaved parmesan and sprinkle over the top.
