Peach and mango chicken

Quantity Ingredient
-3 lb fryer chicken
¼ cup Butter
1 cup Diced mango
½ cup Diced peaches
3 Strips lemon rind
cup CHICKEN STOCK
1 tablespoon Lemon juice
½ cup Heavy cream
Salt & pepper

Directions

Preheat oven to 350. Fry chicken in butter until brown on all sides.

Add mango, peaches, rind & stock. Cover & bake 1 hour. Remove chicken from pan & keep warm. Remove rind. Add juice & cream. Season to taste. Bring sauce to simmer & reduce until thick. Pour over chicken & serve.
