Peaches in honey vanilla syrup

Ingredients

Quantity Ingredient
¼ cup Water
¼ cup Honey
1 2\" Vanilla Bean
4 larges Peaches ( or nectarines),
Pitted, pealed,and thickly
Sliced
1 tablespoon Lemon juice
1 pint Vanilla nonfat yogurt

Directions

Bring water, honey, and vanilla bean to boil; reduce heat and simmer 5 minutes. Add peaches; raise heat to bring mixture back to a fast simmer. Simmer until peahes are just softened, 10-15 minutes, depending on ripeness. Remove from heat; stir in lemon juice.

Refrigerate at least 2 hours. Serve over frozen yogurt.
