Peaches in honey vanilla syrup

4 | larges | Peaches ( or nectarines), |
Pitted, pealed,and thickly | ||

1 | tablespoon | Lemon juice |
1 | pint | Vanilla nonfat yogurt |
Directions
Bring water, honey, and vanilla bean to boil; reduce heat and simmer 5 minutes. Add peaches; raise heat to bring mixture back to a fast simmer. Simmer until peahes are just softened, 10-15 minutes, depending on ripeness. Remove from heat; stir in lemon juice.
Refrigerate at least 2 hours. Serve over frozen yogurt.
