Peanut butter-granola munchies

8 Servings

Ingredients

Quantity Ingredient
2 tablespoons Margarine
2 tablespoons Creamy peanut butter
3 cups Miniature marshmallows, (5-1/2 ounces)
cup Low-fat granola with raisins
Vegetable cooking spray

Directions

Combine margarine and peanut butter in a large saucepan; place over low heat until margarine and peanut butter melt, stirring frequently. Add marshmallows; cover and cook 5 minutes or until marshmallows melt, stirring occasionally.

Remove from heat, and add granola. Working rapidly, toss the mixture gently, and spread into the bottom of an 8-½ x 4-½ x 3-inch loaf pan coated with cooking spray. Let cool completely in pan.

Remove from pan; cut in half lengthwise, and then slice each half crosswise into 8 (1-inch) pieces. Yield: 8 servings (serving size: 2 [2 x 1-inch] bars).
