Pear corned beef slaw

Ingredients

2 Fresh USA Bartlett pears; red and yellow,
Cored; diced
6 cups Shredded cabbage
1 can Corned beef; (12 ounces) cubed
¼ cup Chopped onion
1 cup Mayonnaise
1 cup Cubed Swiss cheese
1 tablespoon Vinegar
2 teaspoons Prepared mustard
1 teaspoon Prepared horseradish
2 teaspoons Sugar
2 teaspoons Celery seed
1 teaspoon Caraway seed; (optional)

Directions

Toss together pears, cabbage, corned beef, Swiss cheese and onion. Blend mayonnaise with remaining ingredients. Add to salad and toss gently, so that all ingredients are coated evenly. Serve in a lettuce lined bowl.

Garnish with additional red and yellow pear slices and parsley, if desired.

Always be sure to use ripe pears.
