Peppered cajun chicken

4 | Boneless; skinless chicken breasts | |
1 | teaspoon | Cajun seasoning (see note) |

1 | large | Onion chopped |
3 | Stalks ceery; chopped | |
1½ | cup | Fresh or frozen sliced okra (not breaded) |
½ | teaspoon | Salt |
Directions
Preheat oven to 325 degrees. Season each side of chicken breasts with cajun seasoning and plenty of black pepper. Brownchicken breasts in skillet sprayed with non-stick cooking spray. Cook just long enough to brown on each side. Remove chicken breasts from skillet and brown onions and celery in same skillet. Spray 9"x9" baking dish with non-stick cooking spray. Line bottom of dish with browned onion and celery. Add okra on top of onions and celery. Add salt and a little more cajun seasoning. Place browned chicken breasts on top and cover and bake at 325 degrees for 30-35 minutes or until chicken breasts are tender. Entire recipe makes 4 servings.
NOTE: There are several different cajun seasonings on the market. All are somewhat similar in taste. Any brand may be used.
