Plum ginger chicken salad

Ingredients

Quantity Ingredient
1 pack Rice mix, long grain & wild
2 cups Chicken breast, boneless; cooked and cubed
½ cup Green onions; sliced
4 Plums; sliced
2 tablespoons Oil, vegetable
2 tablespoons Lemon juice
1 tablespoon Soy sauce
½ teaspoon Ginger, ground

Directions

Prepare rice mix as directed; cool to room temperature. Combine rice, chicken, green onions and sliced plums in large mixing bowl. To prepare dressing, combine oil, lemon juice, soy sauce and ginger; pour over rice mixture and toss lightly. Chill until served.
