Poor mans jambalaya

1 | teaspoon | White pepper |
1 | teaspoon | Dry mustard |
1 | teaspoon | Ground red pepper |
1 | teaspoon | Gumbo file |
½ | teaspoon | Ground cumin |
½ | teaspoon | Black pepper |
½ | teaspoon | Dried thyme leaves |
4 | tablespoons | Margarine |
1½ | cup | Smoked ham |
1 | cup | Smoked pork sausage, diced |
1½ | cup | Onions, chopped |
1½ | cup | Celery, chopped |
1 | cup | Bell peppers, chopped |
1½ | teaspoon | Garlic, minced |
2 | cups | Uncooked rice |
4 | cups | Basic beef, pork or chicken |

Directions
Thoroughly combine the seasoning. Mix ingredients in a small bowl and set aside. In a large heavy skillet, melt margarine. Add ham and sausage. Cook for 5 minutes, stirring occasionally. Add onions, celery, bell peppers, garlic and seasoning mix. Stir well and continue cooking until browned, 10 to 12 minutes, stirring occasionally and scrapping bottom of pan occasionally.
