Poor mans jambalaya

Ingredients

4 smalls Whole bay leaves
1 teaspoon Salt
1 teaspoon White pepper
1 teaspoon Dry mustard
1 teaspoon Ground red pepper
1 teaspoon Gumbo file
½ teaspoon Ground cumin
½ teaspoon Black pepper
½ teaspoon Dried thyme leaves
4 tablespoons Margarine
cup Smoked ham
1 cup Smoked pork sausage, diced
cup Onions, chopped
cup Celery, chopped
1 cup Bell peppers, chopped
teaspoon Garlic, minced
2 cups Uncooked rice
4 cups Basic beef, pork or chicken
Stock

Directions

Thoroughly combine the seasoning. Mix ingredients in a small bowl and set aside. In a large heavy skillet, melt margarine. Add ham and sausage. Cook for 5 minutes, stirring occasionally. Add onions, celery, bell peppers, garlic and seasoning mix. Stir well and continue cooking until browned, 10 to 12 minutes, stirring occasionally and scrapping bottom of pan occasionally.
