Pork chop supreme

Ingredients

Quantity Ingredient
4 Lean pork chops; 1-inch thick
4 slices Onion; thin
¼ cup Uncooked rice (not instant rice!)
1 can (19-oz) whole tomatoes (up to)
1 teaspoon Salt
Pepper to taste

Directions

Trim off excess fat. Season chops. Brown in lightly greased skillet. Top each chop with slice of onion, 1 tablespoon rice & top with a whole tomato.

Add any remaining tomatoes & juice to skillet. Season with salt & pepper.

Cover tightly & simmer in skillet 1-½ hours or put in covered baking dish & bake at 350 for 1-½ hours. Yields 4 servings.
