Portugese green bean tureen

1 | Mediuim onion; chopped | |
2 | Cloves garlic; minced | |
4 | cups | Water |
2 | cups | Diced white potatoed; (peeled if desired) |
½ | teaspoon | Salt |
½ | teaspoon | Ground black pepper |
2 | cups | Green beans; trimed and cut into 1/2 inch pieces, (about 1/2 pound) |
2 | tablespoons | Chopped fresh cilantro |
2 | tablespoons | Chopped fresh parsley |
Directions
Hi, this is from Vegetarian Soup Cuisine by Jay Solomon. I just left out the oil. I like his cookbooks a lot.
Dry sautee onions and garlic until they begin to sweat and are fragrant.
Add water, potatoes and salt and pepper, bring to a simmer, cook for 20 minutes. Stir in green beans and cook for 10 - 15 minutes more. Turn off heat, stir in fresh herbs and let stand for 10 minutes.
Pour soup into a blender or food processor and process for 5 - 10 seconds until smooth. Serve with warm, crusty bread.
