Potato patty pancakes

Ingredients

Quantity Ingredient
2 cups Potatoes, seasoned & mashed
1 Egg, slightly beaten
1 tablespoon Onion, finely chopped
1 tablespoon Green pepper, chopped
2 tablespoons Oil

Directions

Combine all ingredients except oil; mix well. Shape into six patties.

Brown well in hot oil, about 4 minutes on each side. I use leftover mashed potatoes myself. Randy Rigg
